How To Make Texas Cowboy Stew

Ingredients
- 1.5 lbs beef chuck, cut into cubes
- 2 tbsp vegetable oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 bell pepper, diced
- 2 carrots, sliced
- 2 potatoes, diced
- 1 can (14 oz) diced tomatoes
- 1 cup beef broth
- 1 tbsp chili powder
- 1 tsp cumin
- 1 tsp paprika
- Salt and pepper to taste
- Optional toppings: shredded cheese, sour cream, sliced jalapenos
Instructions

In a large pot, heat the vegetable oil over medium heat. Add the beef cubes and brown them on all sides. Remove the beef from the pot and set aside.

In the same pot, add the chopped onion, minced garlic, and diced bell pepper. Sauté until the vegetables are softened.

Add the beef back to the pot, along with the sliced carrots, diced potatoes, diced tomatoes (including the liquid), beef broth, chili powder, cumin, paprika, salt, and pepper. Stir well to combine.

Bring the stew to a boil, then reduce heat to low and cover the pot. Simmer for 1.5 to 2 hours, until the beef is tender and the flavors have melded together.

Taste and adjust seasoning if needed. Serve hot, garnished with your choice of optional toppings.
