Ingredients

  • 1 pound ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can (14.5 ounces) diced tomatoes
  • 1 can (15 ounces) kidney beans, drained and rinsed
  • 1 can (15 ounces) pinto beans, drained and rinsed
  • 1 cup tomato juice
  • 1 cup beef broth
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (optional)
  • Shredded cheddar cheese, for topping
  • Chopped onions, for topping

Instructions

  1. In a large pot, brown the ground beef over medium heat. Drain any excess fat.

  2. Add the diced onion and minced garlic to the pot and cook until the onion is translucent.

  3. Stir in the diced tomatoes, kidney beans, pinto beans, tomato juice, beef broth, chili powder, cumin, salt, black pepper, and cayenne pepper (if using).

  4. Bring the chili to a boil, then reduce heat to low and simmer for 1 hour, stirring occasionally.

  5. Serve the chili hot, topped with shredded cheddar cheese and chopped onions.
