Frijoles de la olla is a Mexican bean stew that is brimming with flavors, thanks to the combination of garlic, olive oil, and onions.

Ingredients

  • 2 lb Camellia Brand Pinto Beans, rinsed and drained
  • 14 cup water
  • 2 tbsp olive oil
  • ½ onion, medium, sliced in 2 pieces
  • 5 garlic cloves
  • 3 tsp sea salt
  • Pico de gallo, for serving
  • Bolillo, (French bread), for serving

Instructions

  1. Combine beans and water in a 6-quart heavy bottomed pot or clay pot. Stir in olive oil, onion pieces, garlic cloves and salt. Bring to a boil.

  2. Reduce heat, cover and simmer for 2 hours or until beans are tender. Adjust salt as needed.

  3. Serve as a main dish with pico de gallo and bolillo (French bread).
