Ingredients

  • 4 bone-in chicken thighs
  • 4 bone-in chicken drumsticks
  • 1/2 cup soy sauce
  • 1/2 cup vinegar
  • 1/4 cup water
  • 4 cloves garlic, minced
  • 1 tablespoon whole black peppercorns
  • 2 bay leaves
  • 1 tablespoon sugar

Instructions

  1. In a large pot, combine the soy sauce, vinegar, water, minced garlic, peppercorns, bay leaves, and sugar. Stir well to mix.

  2. Add the chicken pieces to the pot, making sure they are submerged in the sauce.

  3. Bring the mixture to a boil over medium heat, then reduce the heat to low.

  4. Cover the pot and let the chicken simmer for 35-40 minutes or until cooked through and tender. Stir occasionally.

  5. Remove the lid and increase the heat to medium-high. Cook for an additional 5 minutes to thicken the sauce.

  6. Serve the chicken adobo hot with steamed rice and some of the sauce spooned over the top.
