Ingredients
- 4 potatoes, peeled and diced
- 1 chorizo sausage, sliced
- 1 bell pepper, diced
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 can (14 oz) diced tomatoes
- 2 cups of chicken or vegetable broth
- 1 tsp paprika
- 1/2 tsp cumin
- Salt and pepper to taste
- 4 eggs
- Fresh parsley, chopped (for garnish)
Instructions

In a large pot, heat some oil over medium heat. Add the chorizo and cook until browned. Remove from the pot and set aside.

In the same pot, add the onions and bell pepper. Cook until softened.

Add the garlic, paprika, and cumin. Cook for another minute.

Add the diced tomatoes, potatoes, and broth. Bring to a simmer and let cook for about 20 minutes or until the potatoes are tender.

Meanwhile, heat another pan and fry a sunny-side-up egg for each serving.

Once the stew is cooked, season with salt and pepper to taste. Serve the stew in bowls, topped with the fried eggs. Garnish with fresh parsley.
