Ingredients

  • 1 can (28 oz) of crushed tomatoes
  • 1 cup vegetable broth
  • 1/2 cup heavy cream
  • 1 tsp sugar
  • 1/2 tsp garlic powder
  • 1/2 tsp dried basil
  • 1/2 tsp dried oregano
  • Salt and pepper to taste
  • 2 cups shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 4 cloves garlic, minced
  • 4 slices of bread

Instructions

  1. In a large pot, combine crushed tomatoes, vegetable broth, heavy cream, sugar, garlic powder, dried basil, and dried oregano. Season with salt and pepper to taste.

  2. Bring the mixture to a gentle simmer over medium heat and cook for 15-20 minutes.

  3. Meanwhile, preheat the oven to 375°F (190°C).

  4. In a small bowl, mix together shredded mozzarella cheese, grated Parmesan cheese, and minced garlic.

  5. Place the slices of bread on a baking sheet, then spread the cheese mixture evenly on top of each slice.

  6. Bake in the preheated oven for 10-12 minutes, or until the cheese is melted and bubbly.

  7. Once the tomato soup is cooked, blend it using an immersion blender or transfer it to a regular blender and blend until smooth.

  8. Serve the tomato soup hot with the cheesy garlic dippers on the side.
