Ingredients

  • 250g prawns, peeled and deveined
  • 250g salmon fillets, skin removed
  • 1/4 cup breadcrumbs
  • 1/4 cup chopped fresh parsley
  • 1/4 cup diced red onion
  • 2 cloves garlic, minced
  • 1 tsp lemon zest
  • 1/2 tsp paprika
  • Salt and pepper, to taste
  • 4 hamburger buns
  • Lettuce and tomato, for serving
  • Spicy Mayo:
  • 1/4 cup mayonnaise
  • 1 tsp sriracha sauce
  • 1/2 tsp lime juice

Instructions

  1. In a food processor, pulse the prawns and salmon until minced.

  2. In a mixing bowl, combine the minced seafood with breadcrumbs, parsley, red onion, garlic, lemon zest, paprika, salt, and pepper.

  3. Shape the mixture into patties and refrigerate for 10 minutes.

  4. Preheat a grill or non-stick pan over medium heat. Cook the patties for 4-5 minutes per side, until cooked through.

  5. Toast the hamburger buns.

  6. In a small bowl, mix together the mayonnaise, sriracha sauce, and lime juice to make the spicy mayo.

  7. Assemble the burgers with lettuce, tomato, a patty, and a dollop of spicy mayo.

  8. Serve hot and enjoy!
