  • 2 cloves of garlic, minced
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 2 cups vegetable broth
  • 1 can (14 oz) diced tomatoes
  • 1 can (8 oz) tomato sauce
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup cooked pasta (such as penne or elbow)

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onions and garlic, sauté until fragrant.

  2. Add carrots and celery, cook for an additional 2-3 minutes.

  3. Pour in vegetable broth, diced tomatoes, tomato sauce, dried basil, dried oregano, salt, and black pepper. Stir well to combine.

  4. Bring the soup to a boil, then reduce heat and simmer for 15-20 minutes to allow flavors to meld together.

  5. Add cooked pasta and simmer for another 5 minutes.
