  • 2 tbsp lemon juice

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the diced onion and minced garlic, and sauté until fragrant and translucent.

  2. Stir in the cumin, paprika, cinnamon, and cayenne pepper (if using), and cook for an additional minute to toast the spices.

  3. Add the white beans, vegetable broth, orange juice, and lemon juice to the pot. Bring to a simmer and let it cook for about 30 minutes to allow the flavors to meld together.

  4. Using an immersion blender or a regular blender, carefully blend the soup until smooth and creamy.

  5. Season with salt and pepper to taste. If the soup is too thick, add more vegetable broth or water to reach the desired consistency.
