Serves:
Ingredients
- 1 tbsp olive oil
- 1 onion, diced
- 3 garlic cloves, minced
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp cinnamon
- 1/4 tsp cayenne pepper (optional, adjust to taste)
- 2 cans (15 oz each) white beans, drained and rinsed
- 3 cups vegetable broth
- 1 cup orange juice
- 2 tbsp lemon juice
- Salt and pepper, to taste
- Fresh cilantro, for garnish
Instructions
-
Heat olive oil in a large pot over medium heat. Add the diced onion and minced garlic, and sauté until fragrant and translucent.
-
Stir in the cumin, paprika, cinnamon, and cayenne pepper (if using), and cook for an additional minute to toast the spices.
-
Add the white beans, vegetable broth, orange juice, and lemon juice to the pot. Bring to a simmer and let it cook for about 30 minutes to allow the flavors to meld together.
-
Using an immersion blender or a regular blender, carefully blend the soup until smooth and creamy.
-
Season with salt and pepper to taste. If the soup is too thick, add more vegetable broth or water to reach the desired consistency.
-
Serve the spiced citrus bean soup hot, garnished with fresh cilantro.
