  • 6 cups peeled and diced potatoes
  • 1 cup chopped onion
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • 1/2 cup shredded cheddar cheese
  • Chopped green onions for garnish

Instructions

  1. In the slow cooker, add potatoes, onion, vegetable broth, garlic powder, salt and pepper.

  2. Cook on high for 5-6 hours or low for 8-10 hours or until potatoes are soft.

  3. Using a hand blender, blend the soup until completely smooth.

  4. Stir in heavy cream and cheddar cheese.

  5. Ladle into bowls and garnish with chopped green onions.
