Ingredients
- 1 pound shrimp, peeled and deveined
- 2 tablespoons butter
- 1 onion, diced
- 2 garlic cloves, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 2 potatoes, peeled and diced
- 4 cups chicken broth
- 1 cup milk
- 1 cup heavy cream
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Chopped fresh parsley for garnish

In a large pot, melt the butter over medium heat. Add the onion, garlic, carrots, and celery. Cook until the vegetables are tender.

Add the potatoes, chicken broth, and dried thyme. Bring to a boil, then reduce heat and simmer until the potatoes are cooked through.

In a separate pan, cook the shrimp until pink and opaque. Remove from heat and set aside.

Using an immersion blender or regular blender, blend the soup until smooth.

Return the soup to the pot and stir in the milk and heavy cream. Add the cooked shrimp and season with salt and pepper.
