How To Make Prime Rib Soup

Ingredients
- 1.5 lbs prime rib, cut into small cubes
- 1 onion, diced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 4 garlic cloves, minced
- 6 cups beef broth
- 1 cup red wine
- 2 bay leaves
- 1 tsp dried thyme
- Salt and pepper, to taste
- Fresh parsley, for garnish

In a large pot, brown the prime rib cubes over medium heat until nicely seared. Remove from pot and set aside.

Add the diced onion, sliced carrots, sliced celery, and minced garlic to the pot. Cook until vegetables are tender.

Return the seared prime rib to the pot and add the beef broth, red wine, bay leaves, dried thyme, salt, and pepper. Stir well.

Bring the soup to a boil, then reduce heat to low. Simmer for 2 hours, or until the prime rib is tender and flavors are well combined.

Remove the bay leaves and discard. Taste and adjust seasonings if necessary.
