  • 4 medium sized potatoes, peeled and diced

  • 2 cloves of garlic, minced
  • 4 cups of chicken or vegetable broth
  • 1 cup of shredded cheddar cheese
  • 1 cup of milk
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. In a large pot, heat some oil over medium heat. Add the diced onions and minced garlic. Cook until onions are translucent.

  2. Add the diced potatoes and cook for another 5 minutes, stirring occasionally.

  3. Pour in the chicken or vegetable broth. Bring to a boil, then reduce heat and let it simmer for about 15-20 minutes, until the potatoes are fork-tender.

  4. Using an immersion blender or a regular blender, blend the soup until smooth and creamy.
