Ingredients

  • 4 large carrots, peeled and grated
  • 1/2 cup shelled pistachios, roughly chopped
  • 1/2 cup crumbled feta cheese
  • 1/4 cup fresh mint leaves, chopped
  • 1/4 cup olive oil
  • 2 tbsp lemon juice
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the grated carrots, chopped pistachios, crumbled feta cheese, and chopped mint leaves.

  2. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.

  3. Pour the dressing over the carrot mixture and toss until well combined.

  4. Serve immediately or refrigerate for later. Enjoy!
