Ingredients
- 2 cups frozen peas
- 1 onion, diced
- 2 cloves of garlic, minced
- 4 cups vegetable broth
- 1/2 cup fresh mint leaves
- Salt and pepper, to taste
- Olive oil, for cooking
- Optional garnish: yogurt, croutons, or additional mint leaves
Instructions

In a large pot, heat olive oil over medium heat. Add the diced onion and minced garlic, and sauté until softened, about 5 minutes.

Add the frozen peas and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer for 10 minutes, or until peas are cooked through.

Remove the pot from heat and let it cool slightly. Stir in the fresh mint leaves.

Use an immersion blender or transfer the soup to a blender or food processor, and blend until smooth and creamy.
