Ingredients

  • 1 butternut squash, peeled and chopped
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1 inch of ginger, grated
  • 4 cups vegetable broth
  • 3 tablespoons miso paste
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • Salt and pepper to taste
  • Chopped green onions and sesame seeds for garnish

Instructions

  1. In a large pot, heat the sesame oil over medium heat. Add the onion, garlic, and ginger and sauté until fragrant.

  2. Add the butternut squash to the pot and cook for about 5 minutes, stirring occasionally.

  3. Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for about 20 minutes, or until the butternut squash is soft and cooked through.

  4. In a small bowl, whisk together the miso paste and soy sauce until well combined. Add this mixture to the pot and stir well.

  5. Use an immersion blender or transfer the soup to a blender and blend until smooth and creamy.

  6. Season with salt and pepper to taste.

  7. Serve the soup hot, garnished with chopped green onions and sesame seeds.
