  • 1 lb crab meat
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 potatoes, peeled and diced
  • 1 can (14 oz) diced tomatoes
  • 4 cups chicken broth
  • 1 tbsp Old Bay seasoning
  • 1 bay leaf
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot, sauté the onions, carrots, and celery until they become translucent.

  2. Add potatoes, tomatoes, chicken broth, Old Bay seasoning, bay leaf, salt, and pepper. Bring the mixture to a boil, then reduce heat and simmer for 30 minutes.

  3. Gently stir in the crab meat and simmer for an additional 10-15 minutes, or until the crab is heated through.

  4. Remove the bay leaf and garnish with fresh parsley.
