Ingredients

  • 1 lb fresh asparagus, trimmed and chopped
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil

Instructions

  1. In a pot, heat olive oil over medium-high heat.

  2. Add chopped onion and minced garlic, sauté until onions are translucent.

  3. Add chopped asparagus and continue to cook until asparagus is fork-tender.

  4. Pour in chicken broth and bring to a boil, then reduce heat and let simmer for 10 minutes.

  5. Use an immersion blender or transfer soup to a blender to puree until smooth.

  6. Pour in heavy cream, salt, and black pepper, stir well.

  7. Allow to simmer on low for 5 minutes.

  8. Serve hot and enjoy!
