  • 1 lb fresh mushrooms, sliced
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 tbsp butter
  • 2 tbsp flour
  • 2 cups vegetable broth
  • 1 cup milk
  • 1 cup sour cream
  • 2 tsp paprika
  • 1 tsp dried dill
  • Salt and pepper, to taste

Instructions

  1. In a large pot, melt the butter over medium heat. Add the diced onion and minced garlic, and cook until translucent.

  2. Add the sliced mushrooms to the pot and cook until they release their liquid and become tender.

  3. Sprinkle flour over the mushrooms and stir well to coat.

  4. Gradually add the vegetable broth, stirring constantly, until well combined.

  5. Add the milk, sour cream, paprika, and dried dill to the pot. Stir well and bring the soup to a simmer.

  6. Reduce heat to low and let the soup simmer for 15-20 minutes, until flavors are well blended.

  7. Season with salt and pepper to taste.

  8. Serve hot and garnish with fresh dill, if desired.
