Ingredients

  • 2 lb beef stew
  • 2 tbsp oil , or shortening
  • 1 lb tomatoes
  • 6 carrots, peeled and sliced
  • 1.25 oz chili mix
  • 1.5 oz enchilada mix
  • ½ cup sour cream

Instructions

  1. Brown beef in oil in large skillet; pour off excess fat.
  2. Stir in tomatoes, contents of chili and enchilada mixes and carrots.
  3. Cover and cook over medium heat until tender, stirring often.
  4. Stir in sour cream just before serving.
  5. Serve in flour tortillas with beans and rice.
