  • 1 can (400ml) coconut milk
  • 1 cup vegetable broth
  • 2 tbsp soy sauce
  • 2 tbsp lime juice
  • 2 tbsp brown sugar
  • 1 tbsp chili paste
  • 1 tbsp minced ginger
  • 3 cloves garlic, minced
  • 1 cup mushrooms, sliced
  • 1 cup tofu, cubed
  • 1 cup bell peppers, sliced
  • 1 cup snow peas
  • 1/4 cup cilantro, chopped
  • Salt, to taste

Instructions

  1. In a large pot, combine coconut milk, vegetable broth, soy sauce, lime juice, brown sugar, chili paste, ginger, and garlic. Bring to a simmer over medium heat.

  2. Add mushrooms, tofu, bell peppers, and snow peas. Cook for 10 minutes or until vegetables are tender.

  3. Stir in cilantro and season with salt to taste. Serve hot.
