  • 1 tbsp vegetable oil
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 2 tbsp red curry paste
  • 1 can (14 oz) coconut milk
  • 4 cups chicken or vegetable broth
  • 2 tbsp soy sauce
  • 1 tbsp fish sauce
  • 1 tbsp sugar
  • 1 lb boneless chicken thighs, sliced
  • 8 oz egg noodles
  • Optional toppings: cilantro, lime wedges, chopped peanuts


  1. In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic, and cook until softened.

  2. Stir in the red curry paste and cook for a minute until fragrant.

  3. Pour in the coconut milk, chicken or vegetable broth, soy sauce, fish sauce, and sugar. Bring to a simmer.

  4. Add the sliced chicken thighs to the pot and cook for about 15 minutes until cooked through.

  5. Meanwhile, cook the egg noodles according to package instructions. Drain and set aside.

  6. Serve the Khao Soi Soup by dividing the cooked noodles among four bowls. Ladle the soup over the noodles.

  7. Garnish with optional toppings such as cilantro, lime wedges, and chopped peanuts.
