- 1 tbsp vegetable oil
- 1 onion, chopped
- 3 garlic cloves, minced
- 2 tbsp red curry paste
- 1 can (14 oz) coconut milk
- 4 cups chicken or vegetable broth
- 2 tbsp soy sauce
- 1 tbsp fish sauce
- 1 tbsp sugar
- 1 lb boneless chicken thighs, sliced
- 8 oz egg noodles
- Optional toppings: cilantro, lime wedges, chopped peanuts
Instructions

In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic, and cook until softened.

Stir in the red curry paste and cook for a minute until fragrant.

Pour in the coconut milk, chicken or vegetable broth, soy sauce, fish sauce, and sugar. Bring to a simmer.

Add the sliced chicken thighs to the pot and cook for about 15 minutes until cooked through.

Meanwhile, cook the egg noodles according to package instructions. Drain and set aside.
