  • 1 lb halibut fillets, cut into bite-sized pieces
  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 potatoes, peeled and diced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 1 bay leaf
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onion and garlic, and sauté until softened.

  2. Add the carrots, celery, and potatoes to the pot and cook for another 5 minutes.

  3. Pour in the vegetable broth and bring to a simmer. Add the bay leaf and dried thyme. Season with salt and pepper to taste.

  4. Gently stir in the halibut pieces and cook for about 10 minutes, or until the fish is cooked through and flakes easily with a fork.

  5. Stir in the heavy cream and cook for an additional 5 minutes, until heated through.

  6. Remove the bay leaf and serve the chowder hot. Garnish with fresh parsley.
