Ingredients

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 8 oz sliced mushrooms
  • 2 cups fish stock
  • 1 lb white fish (such as cod or halibut), cut into chunks
  • 1 cup heavy cream
  • 2 tbsp chopped fresh parsley
  • salt and pepper, to taste

Instructions

  1. Heat oil in a large pot over medium heat. Add onion and garlic and cook until softened, about 5 minutes.

  2. Add mushrooms and cook for another 5 minutes.

  3. Pour in fish stock and bring to a simmer.

  4. Add fish and simmer until cooked through, about 8-10 minutes.

  5. Stir in heavy cream and parsley. Season with salt and pepper, to taste.
