  • 2 cups fresh peas
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1/2 cup fresh mint leaves
  • 1/2 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat some oil over medium heat and add the onions and garlic. Cook until they are translucent and fragrant.

  2. Add the fresh peas and vegetable broth to the pot. Bring to a boil and then reduce heat to a simmer. Cook for about 10 minutes until the peas are tender.

  3. Remove the pot from heat and stir in the mint leaves. Allow the mixture to cool slightly.

  4. Using an immersion blender or regular blender, puree the soup until smooth.

  5. Return the pot to the stove over low heat. Stir in the heavy cream and season with salt and pepper.

  6. Cook the soup for another 5 minutes, stirring occasionally.

  7. Remove from heat and serve hot. Garnish with additional mint leaves if desired.
