  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 cup milk
  • 2 tbsp vegetable oil
  • 1 cup cooked chicken, shredded
  • 1/2 cup onion, finely diced
  • 1/2 cup carrot, finely diced
  • 1/2 cup celery, finely diced
  • 2 cloves garlic, minced
  • 1 tsp dried parsley
  • 1/2 tsp dried thyme
  • 1/2 tsp dried rosemary
  • Salt and pepper, to taste
  • 2 cups chicken broth

Instructions

  1. In a large bowl, combine the flour, baking powder, and salt. Mix well.

  2. In a small bowl, whisk together the milk and vegetable oil. Pour the wet ingredients into the dry ingredients and stir until a dough forms.

  3. On a floured surface, roll out the dough to about 1/4 inch thickness. Cut into small squares or circles using a cookie cutter or knife.

  4. In a large pot, heat the chicken broth over medium heat. Add the shredded chicken, onion, carrot, celery, garlic, parsley, thyme, and rosemary. Season with salt and pepper.

  5. Bring the broth to a simmer and then drop the dumplings into the pot, one by one. Cook for about 15 minutes, or until the dumplings are cooked through and the vegetables are tender.

  6. Serve hot and enjoy!
