  • 1 pound boneless, skinless chicken breasts, cut into small pieces
  • 4 cups chicken broth
  • 1 cup all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup milk

Instructions

  1. In a large pot, bring the chicken broth to a boil. Add the chicken pieces and simmer for 10 minutes until cooked through.

  2. In a mixing bowl, combine the flour, baking powder, salt, and black pepper. Stir in the milk until a thick batter forms.

  3. Drop spoonfuls of the batter into the simmering broth. Cover the pot and let the dumplings cook for 10 minutes.

  4. Remove the lid and stir gently to mix the dumplings with the chicken. Cook for an additional 5 minutes until the dumplings are cooked through and the broth has thickened slightly.

  5. Serve the chicken and dumplings hot, garnished with fresh parsley if desired.
