Ingredients

  • 2 courgettes, chopped
  • 2 medium potatoes, peeled and cubed
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 4 cups vegetable broth
  • 1 cup grated cheddar cheese
  • 1/2 cup heavy cream
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat some oil over medium heat. Add the onion and garlic and cook until softened.

  2. Add the courgettes and potatoes to the pot and cook for about 5 minutes, stirring occasionally.

  3. Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for about 20 minutes or until the vegetables are tender.

  4. Using an immersion blender or a regular blender, blend the soup until smooth.

  5. Return the soup to the pot and stir in the grated cheddar cheese until melted and creamy.

  6. Stir in the heavy cream and season with salt and pepper to taste.

  7. Heat the soup over low heat until warmed through.

  8. Serve hot, garnished with fresh parsley.
