Ingredients
- 1 tbsp olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 red bell pepper, diced
- 1 zucchini, diced
- 1 cup dried lentils
- 4 cups chicken broth
- 2 cups cooked chicken, shredded
- 1 cup sweetcorn kernels
- 1 tsp dried thyme
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions

In a large pot, heat olive oil over medium heat. Add onions and garlic, sauté until fragrant.

Add carrots, celery, red bell pepper, and zucchini. Cook for 5 minutes until tender.

Stir in dried lentils and chicken broth. Bring to a boil, then reduce heat and simmer for 20 minutes until lentils are cooked.

Add cooked chicken, sweetcorn, dried thyme, salt, and pepper. Simmer for another 10 minutes.
