A hearty and comforting chowder made with canned salmon, sweet corn, and potatoes.

Ingredients

  • 1 can (14.75 oz) canned salmon, drained and flaked
  • 2 tbsp unsalted butter
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 2 cups whole milk
  • 1 cup chicken broth
  • 1 1/2 cups sweet corn kernels
  • 1 medium potato, peeled and diced
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • chopped fresh parsley, for garnish

Instructions

  1. In a large pot, melt the butter over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.

  2. Add the flour and stir until well combined and fragrant, about 1 minute.

  3. Gradually add the milk and chicken broth, stirring constantly to prevent lumps. Add the sweet corn, potato, salt, and pepper and bring to a boil.

  4. Reduce heat to low and simmer, covered, for 15-20 minutes or until the potatoes are tender.

  5. Add the canned salmon and cook until heated through, about 5 minutes. Serve hot, garnished with chopped parsley.
