Ingredients

  • 1 pound ground beef
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (15 oz) tomato sauce
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/2 teaspoon oregano
  • Salt and pepper, to taste
  • Optional toppings: shredded cheddar cheese, sour cream, diced green onions

Instructions

  1. In a large pot or Dutch oven, cook the ground beef over medium heat until browned. Drain any excess fat.

  2. Add the diced onion, minced garlic, and diced bell pepper to the pot. Cook for 5 minutes, or until the vegetables are softened.

  3. Stir in the diced tomatoes, tomato sauce, kidney beans, black beans, chili powder, cumin, paprika, oregano, salt, and pepper. Bring the mixture to a simmer.

  4. Reduce the heat to low, cover the pot, and let the chili simmer for 1 hour, stirring occasionally.

  5. Taste and adjust the seasoning if needed. Serve hot with optional toppings, if desired.
