Ingredients

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 lb chestnuts, peeled and chopped
  • 4 cups chicken or vegetable broth
  • 1 sprig fresh thyme
  • Salt and black pepper to taste
  • ½ cup heavy cream

Instructions

  1. Heat oil in a large pot over medium heat.

  2. Add onions and garlic, sauté until translucent.

  3. Add chestnuts, broth, thyme, salt, and pepper.

  4. Bring to a boil and simmer for 30 minutes.

  5. Discard thyme and puree until smooth.

  6. Return soup to the pot and add heavy cream.

  7. Reheat gently and serve.
