  • 2 cans (28 oz) of diced tomatoes
  • 1 small onion, diced
  • 2 cloves of garlic, minced
  • 1 tbsp olive oil
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup vegetable broth
  • 1/2 cup heavy cream (optional)
  • Fresh basil leaves, for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic. Cook until the onion is translucent, about 5 minutes.

  2. Add the diced tomatoes (including their juice), dried basil, dried oregano, salt, and black pepper to the pot. Stir well to combine.

  3. Bring the mixture to a simmer and let it cook for 15 minutes, stirring occasionally.

  4. Using an immersion blender, blend the soup until smooth. Alternatively, you can transfer the soup to a blender and blend in batches until smooth.

  5. Return the soup to the pot and stir in the vegetable broth. If desired, add the heavy cream for a richer soup. Cook for an additional 5 minutes, until heated through.

  6. Serve hot, garnished with fresh basil leaves.
