How To Make Cuban Black Bean Soup
A hearty, flavorful soup featuring black beans, peppers, and spices, perfect for a delicious weeknight meal.

Ingredients
- 2 tbsp olive oil
- 1 red onion, diced
- 1 red bell pepper, diced
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp oregano
- 1/4 tsp cayenne pepper
- 2 cans black beans, drained and rinsed
- 3 cups chicken or vegetable broth
- 1 bay leaf
- Salt and pepper to taste
- Juice of 1 lime
Instructions

Heat olive oil in a large pot over medium-high heat, then add onion and red bell pepper. Cook until soft, about 5 minutes.

Add garlic, cumin, oregano, and cayenne pepper, cook for 1 minute more.

Add black beans, chicken or vegetable broth, and bay leaf. Bring to a boil, then reduce heat and simmer for 1-2 hours.

Remove bay leaf and purée a small amount of the soup in a blender or with an immersion blender. Return to the pot.

Stir in lime juice and season with salt and pepper to taste.
