Ingredients

  • 2 tbsp olive oil
  • 1 red onion, diced
  • 1 red bell pepper, diced
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp oregano
  • 1/4 tsp cayenne pepper
  • 2 cans black beans, drained and rinsed
  • 3 cups chicken or vegetable broth
  • 1 bay leaf
  • Salt and pepper to taste
  • Juice of 1 lime

Instructions

  1. Heat olive oil in a large pot over medium-high heat, then add onion and red bell pepper. Cook until soft, about 5 minutes.

  2. Add garlic, cumin, oregano, and cayenne pepper, cook for 1 minute more.

  3. Add black beans, chicken or vegetable broth, and bay leaf. Bring to a boil, then reduce heat and simmer for 1-2 hours.

  4. Remove bay leaf and purée a small amount of the soup in a blender or with an immersion blender. Return to the pot.

  5. Stir in lime juice and season with salt and pepper to taste.
