How To Make Mojo Pork Skewers with Cuban Coolers

Ingredients
- 1.5 lbs pork tenderloin, cut into 1-inch cubes
- 1/4 cup orange juice
- 2 tablespoons lime juice
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- 1 tablespoon fresh oregano, chopped
- 1 teaspoon ground cumin
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 4 cups ice
- 2 cups sparkling water
- 1/4 cup fresh lime juice
- 1/4 cup fresh mint leaves
- 2 tablespoons honey
- Lime wedges, for serving

In a large bowl, whisk together the orange juice, lime juice, minced garlic, olive oil, oregano, cumin, salt, and black pepper to make the Mojo marinade.

Add the pork cubes to the marinade and toss well to coat. Allow the pork to marinate for at least 30 minutes, or up to 4 hours.

While the pork is marinating, prepare the Cuban coolers. In a blender, combine the ice, sparkling water, fresh lime juice, mint leaves, and honey. Blend until smooth and slushy.

Preheat the grill or broiler to medium-high heat. Thread the marinated pork cubes onto skewers, leaving a little space between each piece.

Grill or broil the pork skewers for about 4-5 minutes per side, or until cooked through and slightly charred.

Serve the Mojo pork skewers with lime wedges and the refreshing Cuban coolers on the side.
