Ingredients

  • 1 lb Italian sausage
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 3 cups chicken broth
  • 2 cups water
  • 3 large potatoes, peeled and chopped
  • 2 cups kale, chopped
  • 1 cup heavy cream
  • Salt and pepper, to taste
  • Red pepper flakes, optional

Instructions

  1. Cook sausage in a large pot. Remove and set aside.

  2. Saute onion and garlic until soft. Add broth and water.

  3. Add potatoes and simmer until tender.

  4. Add kale and cook until wilted.

  5. Stir in sausage, cream, salt, and pepper. Simmer for 10 minutes.

  6. Serve hot with red pepper flakes, if desired.
