  • 1 pound dried split peas, rinsed and drained

  • 1 bay leaf
  • 4 cups vegetable broth
  • 2 cups water
  • Salt and pepper, to taste

Instructions

  1. Place split peas, onion, carrots, celery, garlic, thyme, and bay leaf in a slow cooker.

  2. Pour in vegetable broth and water, and stir to combine.

  3. Cover and cook on low for 6 hours, or until peas are tender and soup is thick and creamy.

  4. Remove bay leaf and season with salt and pepper to taste.
