Ingredients
- 1 cup dried split peas
- 4 cups vegetable broth
- 1 onion, diced
- 3 carrots, diced
- 2 celery stalks, diced
- 3 garlic cloves, minced
- 1 teaspoon dried thyme
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh parsley, for garnish

Rinse the dried split peas under cold water and set aside.

In a large pot, heat the olive oil over medium heat. Add the diced onion, carrots, celery, and garlic. Cook until the vegetables soften, about 5 minutes.

Add the dried split peas, vegetable broth, dried thyme, smoked paprika, salt, and pepper to the pot. Stir to combine.

Bring the soup to a boil, then reduce the heat to low. Cover and simmer for 45-60 minutes, or until the split peas are tender.

Use an immersion blender or a regular blender to blend the soup until smooth. If using a regular blender, blend in batches and be careful when blending hot liquids.
