How To Make Slow Cooker Ground Chicken Chili

Ingredients

  • 1 lb ground chicken
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 can (15 oz) kidney beans, rinsed and drained
  • 1 can (15 oz) diced tomatoes, undrained
  • 1 can (6 oz) tomato paste
  • 1 cup chicken broth
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Optional toppings: shredded cheese, sour cream, chopped cilantro

Instructions

  1. In a large skillet, heat a little oil over medium heat. Add the ground chicken and cook until browned. Drain any excess fat.

  2. Transfer the cooked chicken to a slow cooker. Add the diced onion, minced garlic, diced red bell pepper, black beans, kidney beans, diced tomatoes, tomato paste, chicken broth, chili powder, cumin, paprika, oregano, salt, and black pepper. Stir well to combine.

  3. Cover and cook on low heat for 4 hours, or until the flavors are well combined and the chili has thickened.

  4. Serve hot with your choice of toppings, such as shredded cheese, sour cream, and chopped cilantro.
