How To Make Low Calorie Slow Cooker Chicken Tortilla Soup Recipe

Ingredients
- 1 lb boneless, skinless chicken breasts
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (14.5 oz) diced tomatoes, undrained
- 1 cup frozen corn
- 1 small onion, chopped
- 1 jalapeno pepper, seeded and finely chopped
- 3 garlic cloves, minced
- 1 tbsp chili powder
- 1 tsp ground cumin
- 4 cups reduced-sodium chicken broth
- Salt and pepper to taste
- 4 corn tortillas, cut into strips
Instructions

In a slow cooker, add chicken, black beans, diced tomatoes, corn, onion, jalapeno pepper, garlic, chili powder, cumin, and chicken broth.

Cover and cook on low for 6-8 hours or until chicken is tender.

Remove chicken from slow cooker and shred with two forks.

Return shredded chicken to the slow cooker and stir to combine.

Season with salt and pepper to taste.

In a skillet over medium heat, cook tortilla strips until crispy.
