Ingredients

  • 1.5 lbs pork shoulder, cut into cubes
  • 1 onion, diced
  • 3 cloves of garlic, minced
  • 2 cans (15 oz each) of white hominy, drained and rinsed
  • 3 cups chicken broth
  • 2 dried guajillo chilies
  • 1 dried ancho chili
  • 1 tsp dried oregano
  • 1 tsp ground cumin
  • 1 bay leaf
  • Salt and pepper, to taste
  • Toppings: diced avocado, chopped cilantro, sliced radishes, lime wedges, shredded cabbage, and tortilla chips

Instructions

  1. In a large skillet, heat some oil over medium heat. Brown the pork cubes on all sides. Transfer them to the slow cooker.

  2. In the same skillet, add the diced onion and minced garlic. Sauté until fragrant and translucent. Add them to the slow cooker.

  3. Remove the stems and seeds from the dried chilies. Toast them in a dry skillet over medium heat until they become fragrant. Transfer them to a blender or food processor along with a cup of chicken broth. Blend until smooth.

  4. Pour the chili puree into the slow cooker. Add the remaining chicken broth, drained hominy, dried oregano, ground cumin, bay leaf, and season with salt and pepper.

  5. Stir everything together in the slow cooker. Cover and cook on low for 6 hours or on high for 3-4 hours, until the pork is tender and the flavors have melded together.

  6. Remove the bay leaf before serving. Taste and adjust the seasonings if needed.

  7. Serve the Slow Cooker Pozole hot, garnished with diced avocado, chopped cilantro, sliced radishes, a squeeze of lime, shredded cabbage, and tortilla chips.
