Ingredients

  • 2 lbs beef loin tri-tip roast
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 4 cloves garlic, minced
  • 1 tbsp dried thyme
  • 1 tbsp dried rosemary
  • 1 cup beef broth
  • 1 tbsp Worcestershire sauce

Instructions

  1. Preheat a slow cooker on the low setting.

  2. In a large skillet, heat the olive oil over medium-high heat.

  3. Season the beef loin tri-tip roast with salt and pepper on all sides.

  4. Sear the roast in the hot skillet for 2-3 minutes per side until browned.

  5. Transfer the roast to the slow cooker.

  6. In the same skillet, sauté the minced garlic, dried thyme, and dried rosemary for 1 minute until fragrant.

  7. Add the beef broth and Worcestershire sauce to the skillet, stirring to combine.

  8. Pour the mixture over the beef roast in the slow cooker.

  9. Cover the slow cooker and cook on low for 4 hours or until the roast is tender and easily shreds with a fork.

  10. Once cooked, remove the roast from the slow cooker and let it rest for a few minutes before slicing.

  11. Serve the slow-cooked beef loin tri-tip roast hot with your favorite sides and enjoy!
