How To Make Thai Pesto Prawn Noodles

Ingredients
- 250g prawns, peeled and deveined
- 200g rice noodles
- 1 cup fresh basil leaves
- 2 cloves garlic
- 2 green chilies, deseeded
- 1/4 cup peanuts
- 2 tablespoons fish sauce
- 1 tablespoon soy sauce
- 1 tablespoon lime juice
- 1 tablespoon vegetable oil
- Salt and pepper to taste
Instructions

Cook the rice noodles according to package instructions. Drain and set aside.

In a blender or food processor, combine the basil leaves, garlic, green chilies, peanuts, fish sauce, soy sauce, lime juice, and vegetable oil. Blend until you have a smooth pesto sauce.

Season the prawns with salt and pepper. Heat a pan over medium heat and add the prawns. Cook for 2-3 minutes on each side until they turn pink and are cooked through.

Add the cooked noodles to the pan with the prawns. Pour the pesto sauce over the noodles and toss well to combine.

Cook for an additional 2-3 minutes until the noodles are heated through.

Serve hot and garnish with extra basil leaves and peanuts, if desired.
