Ingredients

  • 200g rice noodles
  • 300g prawns, peeled and deveined
  • 2 tbsp vegetable oil
  • 2 cloves garlic, minced
  • 1 red chili, sliced
  • 1 tbsp red curry paste
  • 1 cup coconut milk
  • 2 tbsp fish sauce
  • 1 tbsp soy sauce
  • 1 tbsp brown sugar
  • Juice of 1 lime
  • Fresh cilantro, chopped
  • Lime wedges, for serving

Instructions

  1. Cook the rice noodles according to package instructions. Drain and set aside.

  2. In a large pan, heat the vegetable oil over medium heat. Add garlic and chili and cook for 1 minute.

  3. Add red curry paste and cook for another minute until fragrant.

  4. Add the prawns to the pan and cook until they turn pink and opaque, about 3-4 minutes.

  5. Stir in coconut milk, fish sauce, soy sauce, and brown sugar. Simmer for 5 minutes to allow the flavors to blend.

  6. Add the cooked noodles to the pan and toss to coat in the sauce. Cook for an additional 2-3 minutes until heated through.

  7. Squeeze the lime juice over the noodles and garnish with chopped cilantro.

  8. Serve hot with lime wedges on the side.
