How To Make Pasta with Chilli Tomatoes & Spinach

Ingredients

  • 8 oz pasta
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 tsp red pepper flakes
  • 1 can diced tomatoes
  • 2 cups fresh spinach
  • Salt and pepper, to taste
  • Grated Parmesan cheese, for garnish

Instructions

  1. Cook the pasta according to package instructions. Drain and set aside.

  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes. Cook for 1 minute until fragrant.

  3. Add the diced tomatoes to the skillet and bring to a simmer. Cook for 10 minutes, stirring occasionally.

  4. Stir in the fresh spinach and cook until wilted, about 2 minutes.

  5. Season with salt and pepper to taste.

  6. Add the cooked pasta to the skillet and toss until coated in the sauce.

  7. Serve hot, garnished with grated Parmesan cheese.
