Ingredients

  • 1 lb of white fish fillets, cut into chunks
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1 red bell pepper, sliced
  • 1 can of diced tomatoes
  • 1 cup of vegetable broth
  • 1 tsp of dried thyme
  • 1 tsp of paprika
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat some oil in a large pot over medium heat. Add the onions, garlic, and red bell pepper. Cook until softened, about 5 minutes.

  2. Add the diced tomatoes, vegetable broth, dried thyme, and paprika. Stir well to combine.

  3. Bring the mixture to a simmer and add the fish chunks. Season with salt and pepper.

  4. Let the stew simmer for about 10-15 minutes, or until the fish is cooked through and flakes easily with a fork.

  5. Taste and adjust the seasonings if needed.

  6. Serve the fish stew hot, garnished with fresh parsley.
