Ingredients

  • 2 pounds potatoes, peeled and cubed
  • 1/2 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 1 tablespoon white vinegar
  • 1/4 cup chopped dill pickles
  • 1/4 cup diced red onion
  • 2 tablespoons chopped fresh dill
  • Salt and pepper to taste

Instructions

  1. Boil the potatoes in a large pot of salted water until tender. Drain and let cool.

  2. In a separate bowl, mix together the mayonnaise, Dijon mustard, vinegar, pickles, red onion, and fresh dill.

  3. Add the cooled potatoes to the bowl and gently toss until they are coated with the dressing.

  4. Season with salt and pepper to taste.

  5. Cover and refrigerate for at least 1 hour before serving.
