How To Make Salad Niçoise

Who says vegetarians don’t get to enjoy savory meals? A taste of these authentic vegetarian recipes will make you change your mind. So, you just might want to go vegetarian after your first bite.

Serves:

Ingredients

  • 8 cups mixed salad greens
  • 1 pound small red potatoes, halved
  • 1/2 pound green beans, trimmed
  • 4 hard-boiled eggs, peeled and halved
  • 1 cup cherry tomatoes, halved
  • 1/2 cup olives, pitted
  • 2 cans tuna, drained and flaked
  • 4 anchovy fillets
  • 1/4 cup red onion, thinly sliced
  • 2 tablespoons capers
  • Salt and pepper to taste
  • dressing:
  • 1/4 cup olive oil
  • 2 tablespoons Dijon mustard
  • 2 tablespoons red wine vinegar
  • 1 clove garlic, minced
  • 1 teaspoon honey
  • Salt and pepper to taste

Instructions

  1. In a large pot, add the potatoes and cover with water. Bring to a boil and cook for 8-10 minutes or until tender. Drain and set aside.

  2. In the same pot, add the green beans and cook for 4-5 minutes or until crisp-tender. Drain and set aside.

  3. In a small bowl, whisk together the dressing ingredients until well combined.

  4. In a large salad bowl, arrange the salad greens, potatoes, green beans, eggs, cherry tomatoes, olives, tuna, anchovy fillets, red onion, and capers.

  5. Drizzle the dressing over the salad and toss gently to coat. Season with salt and pepper to taste.

  6. Serve the Salad Niçoise immediately.
