How To Make Special Seafood & Saffron Pasta

Ingredients
- 8 oz linguini pasta
- 1 lb mixed seafood (shrimp, scallops, mussels)
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1/2 tsp saffron threads
- 1 cup chicken or seafood broth
- 1/2 cup white wine
- 1 cup cherry tomatoes, halved
- 1/4 cup fresh parsley, chopped
- Salt and pepper to taste
Instructions

Cook the linguini according to package instructions until al dente. Drain and set aside.

In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute.

Add the mixed seafood to the skillet and cook until shrimp turns pink and scallops are opaque.

Add saffron threads, chicken or seafood broth, and white wine. Let it simmer for 5 minutes.

Stir in cherry tomatoes and cook for 2 minutes until they start to soften.

Add cooked linguini to the skillet and toss to combine with the seafood mixture. Cook for an additional 2 minutes.

Season with salt and pepper to taste.

Serve the seafood and saffron pasta garnished with fresh parsley.
