Ingredients

  • 8 oz linguine
  • 1 lb mixed seafood (shrimp, scallops, mussels)
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 1/2 cup white wine
  • 1 cup cherry tomatoes, halved
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste
  • Lemon wedges for serving

Instructions

  1. Cook the linguine according to package instructions until al dente. Drain and set aside.

  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and cook for 1 minute until fragrant.

  3. Add the mixed seafood to the skillet and cook until they start to turn pink and opaque, about 3-4 minutes.

  4. Pour in the white wine and let it simmer for 2 minutes to reduce slightly.

  5. Add the cherry tomatoes to the skillet and cook for another 2 minutes until they soften.

  6. Season with salt and pepper to taste.

  7. Add the cooked linguine to the skillet and toss everything together until well combined.

  8. Sprinkle with fresh parsley and squeeze some lemon juice over the dish.
